Spicy Roasted Beet Hummus

How do you like your hummus? I always prefer mine to be tangy and spicy and that’s how I came up with this recipe. The sweetness from the roasted beets pairs very well with the garbanzo beans. The lime juice adds a tang to this hummus and the jalapeños gives it the right amount of kick. I like to pair mine with Trader Joes crackers and some vegetables.

Ingredients
  

  • 1 medium beet roasted
  • 1 can garbanzo beans
  • salt as needed
  • 2 tsp lime juice
  • 2 cloves garlic
  • 1 jalapeño
  • 1/2 cup olive oil
  • water as needed
  • sesame seeds to garnish

Instructions
 

  • Coat the beets with olive oil and roast the beets in oven at 400 degrees farenheit for 25 minutes or till they are softened and completely cooked.
  • Let the beets cool for some time
  • In a food processor grind all the ingredients
  • When serving the hummus garnish with olive oil and sesame seeds
