Zucchini and Paneer Waffles

Zucchini and Paneer Waffles can be made in less time. It is a perfect idea for lunch box or a quick snack. It is healthy and high in protein. I like to squeeze the water out of Zucchini to make them crunchy but you can choose to keep them soft. Checkout the quick and easy recipe below that I am sure you will enjoy.

Ingredients
  

  • 1 cup Shredded Zucchini
  • Salt as needed
  • 1 and 1/2 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp amchoor powder raw mango powder
  • 1/2 cup shredded paneer
  • 1/4 cup chopped cilantro
  • 2 tablespoon olive oil
  • 1/2 cup rice flour more as needed
  • 1/4 cup dill and pepper dip to serve it along with the waffles

Instructions
 

  • Shred the Zucchini and add 1 tsp salt to it and leave it for 10 minutes
  • Drain and squeeze the water out of the Zucchini
  • Add chopped cilantro and shredded paneer
  • Add red chili powder, turmeric powder, amchoor powder and salt only if needed
  • Add the rice flour and mix it well to form a thick batter (the longer the batter sits you may need more rice flour)
  • Grease the waffle maker with oil
  • Spread the batter on the waffle maker and cook for 10 minutes
  • Flip it mid way and cook on the other side
  • Garnish with chopped cilantro and serve it along with Dill and Pepper Dip
