Rava Toast Waffles

Rava Toast reminds me of my school days. My mom always made fancy snacks when my friends came over for play dates. Rava Toast was one of our favorites.  The crunch in every bite always made us crave for more. We never realized that we ate lots of veggies as they were hidden. These are easily made in a waffle maker. You can pre make the Rava mixture ahead of time. Make the waffles as needed and cook them for long for extra crunch.

Ingredients
  

  • 4 slices of bread
  • 1/2 cup fine semolina rava
  • 1/4 cup yogurt
  • Salt as needed
  • 1/4 cup tomatoes chopped into pieces
  • 1/4 cup bell peppers diced
  • 1/4 cup carrots chopped into small pieces
  • 1/4 cup chopped onions
  • 2 green chilies finely chopped
  • 1/4 cup chopped cilantro
  • 3 tablespoon olive oil
  • 1 tablespoon thin sev to garnish
  • 2 tablespoon ketchup to serve
  • 2 tablespoon cilantro chili chutney to serve

Instructions
 

  • Chop all the veggies
  • Add semolina to the veggies
  • Add yogurt, chopped cilantro and salt to the semolina veggie mixture
  • Mix it well and form thick batter and let it sit for 5 minutes
  • Using a round cookie cutter or a lid cut the bread in round size
  • Grease the waffle maker with oil
  • Lawyer the semolina batter on bread
  • Cook it in a waffle maker till it is crispy and brown on both sides, you can also cook on pan if you don’t have waffle maker
  • Once it is done, sprinkle thin sev and garnish with cilantro
  • Serve it hot along with chutney and ketchup
  • You can also pack them for school lunches but skip tomatoes to prevent them from getting soggy
