Palak Dal | Spinach and lentils

With the cold weather and early sunsets, my body is always craving for comforting meals. I made Palak Dal and wanted to share this and quick and easy recipe. It is light and so healthy. You can serve it along with hot chapatis or warm bowl of white rice. The dal is so creamy and turns out perfect in an Instant Pot.

Ingredients
  

  • 1 cup moong dal soaked in water
  • 1 tsp minced garlic paste
  • 1 dry red chili
  • 1 tsp green chili paste
  • 1 tablespoon onion paste
  • Salt as needed
  • 2 cups of spinach
  • 1/4 cup chopped cilantro
  • 1/2 tsp turmeric powder
  • 1 tablespoon olive oil
  • 1 tsp cumin seeds
  • 1/4 tsp asafetida powder
  • 3 cups of water

Instructions
 

  • Soak the moong dal in water for 1 hour
  • Put instant pot on sauté mode
  • Add olive oil, cumin seeds, asafetida powder and dry red chili broken into 1/2
  • Once it sizzles, add onion paste, minced garlic paste and soaked dal
  • Add salt and turmeric powder
  • Add the green chili paste and spinach leaves
  • Add water and mix it well
  • Set the instant pot on pressure cooker mode and cook for 20 minutes
  • You can choose to use delayed timer and set the time you want it to be ready and count 1/2 hour extra for the release
  • Once it’s done, open the instant pot, mix it and garnish with chopped cilantro
