Gobi Ka Paratha

Stuffed Parathas are our go to meal especially during weeknight or lunches.  I love Gobi ka Parathas as it is healthy. When paired with Raita, it is a complete meal. We have veggies, carbs and protein from the raita. I love to make them ahead for school lunches or dinners. Every bite will bring so many flavors to you mouth and I promise you can’t eat just one. Ingredients
  

Cauliflower/ Gobi Stuffing

  • 2 cups cauliflower grated in Food processor
  • Salt as needed
  • 1/2 cup chopped cilantro
  • 1 tsp coriander powder
  • 1 and 1/2 tsp red chili powder
  • 1/2 tsp green chili paste optional
  • 1 tsp amchur raw mango powder

Dough

  • 2 cups whole wheat flour
  • Salt as needed
  • 1/2 -3/4 cup water to form dough
  • 1/2 tsp oil
  • 3 tablespoon Amul butter or olive oil to cook parathas

Instructions
 

  • Grind the Cauliflower in food processor
  • Add the spices and chopped cilantro except salt and mix it well
  • Using water, salt and whole wheat flour form a thick dough. Use oil to knead the dough
  • Take 3 tablespoon of cauliflower stuffing and add salt
  • Roll the dough thick and fill with the stuffing
  • Seal the dough and take the excess flour out
  • Use palm of your hands to spread the filling evenly and roll it again till it forms a bigger circle
  • Cook the parathas on medium heat using oil or butter
  • Once the filling with salt is used make another batch by adding salt
  • Serve with Raita or pack for lunchbox
