Thalipeeth is healthy and tasty multigrain flatbread. I call this a Maharashtrian alternative to Thepla. They turn out thick in texture and every bite has a sweetness and crunch from onions and spice from the chilies. It is savory and delicious and can be eaten with Thecha that is a chutney made with green chilies and mustart oil. Since I grew up in Mumbai, I was exposed to Maharashtrian cuisine at an early age. We made so many dishes at home and Thalipeeth was one dish mom made at home when we would need a change from normal Gujarati dishes. We would enjoy Thalipeeth with makhan (white butter) and yogurt and it would be a comforting meal. We ate this for breakfast, lunch, snack or dinner. I make Thalipeeth at home and we love how it turns out. It reminds us of Dutta Snacks that is a Maharashtrian restaurant that we visit every time we go to Mumbai. I am sure you will love this dish as much as we do.
You can alternatively use 2 cups of ready made Thalipeeth flour instead of above
1cupwater to knead
Salt as needed
1/4cupfinely chopped cilantro
1/2cupfinely diced red onions
2green chilies finely choppedadjust per taste
1/4tspturmeric powder
1tspcumin coriander powder
1tspsesame seeds
1/4cupoil for cooking
1tablespoonwhite butter for servingoptional
Instructions
Combine the flours or if you have ready made Thalipeeth flour, use that and add salt, turmeric and cumin coriander powder and mix it well
Add diced onions, green chilies, chopped cilantro and sesame seeds and mix everything well
Add water in parts and form a smooth dough, add more water if needed. Form equal parts of dough
Set a parchment paper or a plastic bag and rub some oil on the paper
Use the hands to roll the dough, use water if the dough is sticking to hands. Once it’s 1/4 inch thick, form 5-6 holes on the flatbread using your finger.
Heat up a pan on medium heat. Spread some oil on it
Lift the whole parchment paper and flip it upside down to drop the flatbread on the pan and slowly peel of the parchment paper and use the same paper to roll other
Pour the oil in the holes and around the edges and cover and cook for 2-3 minutes, flip it on other side and cook for few more minutes
Repeat last 4 steps for remaining dough
Serve it hot with whipped butter and Thecha
